When it comes to sweets, I often dislike cookies, cakes, or anything overly sweet, but I LOVE LOVE olive oil cake! The first time I tried it, I couldn’t stop eating it! No, for me, you couldn’t taste the olive oil, but you can taste the orange zest, which makes it soooo good! I honestly recommend it to anyone who isn’t into overly sweet desserts.
Well, today I want to share an easy and simple recipe!
Ingredients:
1 ½ cups (190g) all-purpose flour
1 teaspoon baking powder
½ teaspoon baking soda
½ teaspoon salt
¾ cup (150g) granulated sugar
2 large eggs
½ cup (120ml) extra virgin olive oil
½ cup (120ml) fresh orange juice (about 1-2 oranges)
1 tablespoon orange zest
½ teaspoon vanilla extract
½ cup (120ml) whole milk or almond milk (optional for extra moisture)
Direction:

Preheat oven to 350°F (175°C). Grease a 9-inch round cake pan and line it with parchment paper.

Mix dry ingredients: In a bowl, whisk together the flour, baking powder, baking soda, and salt.

Whisk wet ingredients: In a separate large bowl, whisk the sugar and eggs until light and fluffy. Then, add the olive oil, orange juice, orange zest, and vanilla extract. Mix well.

Combine: Gradually add the dry ingredients to the wet ingredients, stirring until just combined. If using milk, stir it in last.

Bake: Pour the batter into the prepared cake pan and bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.

Cool & Serve: Let the cake cool in the pan for 10 minutes, then transfer to a wire rack. Dust with powdered sugar if desired.
For me, I would like to add some fruit like strawberries and blueberries!
