Purple Sweat Potato Steamed Buns

Purple+Sweat+Potato+Steamed+Buns

Items you will need are a steamer, one medium/large bowl, one large bowl, wax paper, and large pot. An electric stand mixer and kitchen scale would be useful for this recipe as well, but only if you have them.

Ingredients

250 g Pau flour

60 g caster sugar

2 tsp instant yeast

150 ml water

1 tsp double action powder

20 g butter

Filling

300 g purple sweet potato

Before making these buns you want to cut 16  3 1/2 x 3 1/2 inch squares of wax paper.

Filling

Filling a large pot with water and bring to a rolling boil. While the water is boil, peel and cut sweet potato into about 1/2 inch slices. Carefully put sliced  sweet potatoes into boiling water for 20 minutes. When the potatoes are done boiling, mash them in a medium/large bowl and roll into 16 even balls.

Tip: If potatoes are too dry add a teaspoon of water.

Bun

In an electric stand mixer bowl, add flour, sugar, yeast, water, double action powder, and butter and use the hook attachment on low speed until all ingredients have evenly combined. Set aside in a warm place for 15 minutes, or until your liking, to let the dough rise. Divide the dough into 16 even dough balls. Flatten out each ball into circle. Put a ball of sweet potato on the center of each circle of dough. Pull the dough around the filling, seal the dough by pinching it shut and set onto a piece of parchment paper with the sealed side down.

Score the top of the bun in an x shape. Get out a steamer and put the buns into the steamer. MAKE SURE THERE IS WAX PAPER ON THE BOTTOM OR THEY WILL STICK. Steam them for 15-20minutes and serve hot.
